Thanksgiving

Another Thanksgiving Day has come and gone, but my gratitude continues.  :)

I’ve so much for which to be thankful.

Yesterday my home was full of family, deliciously decadent food, laughter, and sharing of memories–all while making new ones.

I hope you were able to take a moment yesterday to look around and acknowledge your blessings.  And I hope that we will all continue to be grateful for everything we have.

The small daily blessings, in the end, are really the big things that matter.  May we never lose sight of that.

I appreciate each and every one of you.  May this holiday season bring you joy and peace.

Eggplant Lasagna

I’ve had a bumper crop of eggplant this fall!  I can’t explain why because I have truly neglected my little garden for the past few months.

But no matter–because my 3 little eggplant plants have continued to bloom and yield beautiful, tender fruits all season long.

I wish everything were so easy to grow!  Literally, just add water and watch bloom.  :D

MexiCajun Shrimp Fajitas

It all started here.

Two and a half years ago I was planning to make shrimp fajitas for dinner.  Elbow deep in peeling shrimp and a hot skillet ready to go, I stepped into my pantry to grab the cheap taco mix I typically kept on hand.

I was surprised to find there was no cheap taco mix in the pantry, and there was no way I was driving to the grocery store at that point.  So I did what I always do: took matters into my own hands and set off on a new DIY project.

I pulled C’s big containers of various seasonings he uses for his bbq competition hobby and began mixing.

It’s All Hallows Eve, and there’s much astir.

Goblins and witches and ghouls are preparing to wreak havoc under the waning full moon!

And candy-seeking children will scour the land for treats of any kind.

Happy Hour Friday: Resurrection Punch

This was the signature drink for our annual Halloween party last year.  Honestly, it was such a haphazard concoction!

But it was a hit; and believe me, there was NOTHING of it left even before the end of the night!  {I seem to recall someone using a straw to get the very last dregs from the bottom of the punchbowl!}

It was fruity, sweet, and DEADLY!  The kind of drink that sneaks up on you.

Caramel Corn

Candy Corn.  Pumpkins on every doorstep.  Black decor everywhere I turn.

Yep, fall is definitely here.  :)

The light has shifted; and even though it’s still 87°, there’s a chill in the morning air that wasn’t there before.

October in Louisiana can be a tricky time.  Sweater weather in the morning/shorts and flipflops by afternoon.  That’s just the way it is.  And, honestly, I’m not sure I’d have it any other way.
