BUT this is such a quick, easy and fun weeknight dinner solution since there’s very little prep involved. And because they look fun to eat, it’s a great way to get kids to eat some healthy protein.

Broccoli, Rice & Chicken Casserole
This is one of those dishes that makes me think of growing up in a small, rural Baptist church. Dinner on the grounds, small community where everyone knows everyone and their business (lol), familiar hymns, Sunday afternoon naps, and skinned knees from biking mishaps on our gravel road. 
Someone was always sure to bring this casserole to any church event that called for food: 5th Sunday singing, baby showers, wedding showers, funerals, any occasion. And, of course, it was always warm, familiar deliciousness made by some of the best cooks I will ever know. Every time I try my hand at this recipe I remember faces, embraces and a feeling of home. You know that feeling? Back when you were a child: security, invincibility, blissful ignorance of the heartaches life can deal out as you get older. Certain smells trigger these feelings in me. Or sometimes a song. And most definitely some foods.

Slow Cooker Cornbread Dressing
As I promised yesterday, here is my Cornbread Dressing recipe. This is NOT my mother’s recipe. She would always make the best cornbread dressing every holiday. I remember waking up early on Christmas morning only to find my mother slaving away over a hot stove prepping all the ingredients before finally putting it in the oven. She would get up 2 or 3 hours before anyone else to begin cooking so that everything would be ready to go by the time we were loading the car for the trip to grandma’s house.

Savory Broccoli & Chicken Soup

Oddly, this week has found me chaffeuring dental patients to and from tooth-extraction appointments! {eeeeek!} Spicehubby had to have a pesky problem tooth surgically removed today
and tomorrow a dear friend is having TWO wisdom teeth pulled! I don’t mind being the caretaker, I’m just glad I’m not the patient! :)
Because these two won’t be able to eat anything hard or solid for a few days, I started planning soft meals to carry us through this week. This first recipe is so super easy and makes several servings. It was Spicehubby’s first meal this afternoon once the numbness subsided, and there is plenty left for tomorrow as well as sharing a heaping bowl with Sara for her recovery time.

I don’t like to fry food, as in deep fry. Ever. So when Spicehubby was craving fried chicken, I started searching for alternatives. {Confession time} It is not that we never eat fried chicken (or fried fish or fried shrimp or fried….whatever). I just don’t ever cook it myself. :) Usually we eat it at fast food places (gasp!) or other restaurants. Shameful, I know. But it’s true. :/
Anyway, this time I chose to find a better option. And I did!

A few girlfriends and I have started getting together once a month for a light-hearted, mildly competitive game night. The focus isn’t on the activity–which game, what rules or who wins–but on friendship, cocktails, food and gossip. ☺ We all thought that creating a monthly game night would give us a reason to set a standing date with each other so time wouldn’t keep slipping by without us all getting together to laugh, eat and catch up.
This month was my turn to play hostess, a role I very much enjoy.

I am so excited to be participating for the first time in Foodbuzz’s 24×24 project! Inspiration for this party came from my love of entertaining and of drinking wine. The setting for this late spring feast is my garden, under a brand new custom pergola.☺ It was the perfect evening for dinner outside, so we made the most of it.
A full table setting; lots of food; several wines; and a soft breeze set the scene for this feast of indulgence.

I’ve been so busy with work lately that I’ve had little time for anything else. Very little time in the kitchen. No time to write. Not even much time to keep track of all my peeps and tweeps online! I was beginning to have serious withdrawals! But not to worry. I am still alive and kicking! ☺
Since I’ve spent my whole day and now most of my evening preparing for Saturday’s farmer’s market, I had to think fast and act quickly for supper. This is one of my easy go-to recipes.
