Perfect Waffles

Breakfast for dinner.  Happens a lot at my house.  Not every week, but it’s such an easy go-to solution when life gets in the way of planning and executing a successful meal plan.  Usually, even if I have neglected to go grocery shopping, we have eggs on hand and bacon, if we’re lucky. Smile

This time, not really having any other option, I pulled the eggs and bacon out of the fridge and then realized we had no bread.  No problem.  That just means waffles are in order!

Sweet Potato & Pecan Muffins

Fall flavors continue to mesmerize and inspire me in the kitchen.  This time I’ve moved on from pumpkin to sweet potatoes. {I’m not completely moving on from pumpkin, but Spicehubby has requested I give it a break for a while!}  ;)

Since the time change this past weekend has made getting up early a little easier, we actually made a HUGE effort and put in a good 45 minute workout at the gym this morning.  It was just what both of us needed after a weekend of tailgating and eating.  A LOT of eating…  {Side note:  if you don’t already know, we had a pretty good football weekend in Louisiana.  Our LSU Tigers beat Alabama in a much-anticipated shootout Saturday night.  And our most beloved Saints pulled out a nice win over Tampa Bay Sunday afternoon.}

Pumpkin Smoothie

It’s that time of year when something familiar is in the air… Confusion.  Is it summer?  The humidity is not quite as high as usual.  There is a soft morning breeze that brings with it the smell of blooming sweet olive trees.  And the light has a different quality about it.  No, it isn’t really summer.

Is it fall?  Sunny days still bring temps of 90°+.   There are no changing leaves or absence of birds at my backyard feeders.  And the only fall colors to be seen are from the few decorations on neighbors’ homes in anticipation of the season for which we are all so ready.  No, it isn’t fall either.

These are the in between days.  Pockets of pleasantness framed by the ever-clinging heat.   Too warm to put away my flip-flops.  Too chilly to swim.  Such is the changing of the seasons in my sweet home Louisiana.

Apple Pop Tarts and a Party Invitation!

My love affair with fall continues even though the season has not officially started yet.  The homemade applesauce I made a couple of weeks ago was such a hit that I decided to make more and find new uses for it (even though it is ever so scrumptious on its own!).

The title of this post is “Apple Pop Tarts,” but these could also be called apple turnovers or mini apple pies.  It made me feel better to call them pop tarts because I served them for breakfast!  ;)  But they are just as wonderful as dessert.  Simply serve warm with a scoop of ice cream and …. well, you get the picture!

Pumpkin Pecan Bread

After 2 solid days of rain courtesy of Tropical Storm Lee, a cool front has moved in and it feels gloriously like fall!  So much so that I’ve been inspired by visions of pumpkins and apples and baking and gearing up for the holidays.  Lessons of the past have taught me that these low humidity days are limited, so I know to make the most of them while they’re here.

Blog Award & Banana Oat Bread

While I was riffling through my recipes and cookbooks looking for inspiration for Easter, I came across a banana bread recipe I’ve been wanting to try. I love breads of this nature because they freeze well and make the perfect little sum’n sum’n to go along with my morning coffee.
For this recipe, I tweaked it a bit to make a little more tasty and squeeze a little more goodness into it.

Easter Brunch

With no particular plans for Easter Sunday (except to avoid any work whatsoever and try our best to relax), I woke up bright and early in a mood to cook! 6:30 this morning, coffee in hand I started rummaging through several of my cookbooks for inspiration. Funny enough, it was a fellow blogger that provided one of my key menu items. The Pastry Affair posted a flourless peanut butter cookie, and I knew I had to try it.
