Happy Hour Friday: Pepper Punch

I know the Olympics start in London today, and I had every intention of doing a very British drink to toast one of my favorite cities.  But, as usual, I’m behind the 8 ball and not on top of things At. All.

le sigh…..

So instead, I’m sharing this awesome drink my sister concocted.  I didn’t make it, but I sure did drink it!  And it was delish, even though the spice of the jalapeno pepper may not sound very appetizing.  I swear it is surprisingly refreshing.

We had them on K & H’s party barge on Kincaid Lake–a summertime home away from home :)   The “Pair-A-Dice” has been the scene of many a lake party and many more relaxing weekend days cruising the waters on the edge of Kisatchie National Forest.

 

 

 Pepper Punch 

 

 

2 cups vodka

2 fresh limes, quartered

1 fresh jalapeno, sliced (seeded for less heat)

4 cups cranapple cocktail juice

pineapple juice

In a pitcher, muddle lime and jalapeno slices.  Add vodka and cranapple juice.  Mix well.

To serve, fill glass with ice and add punch to fill glass 3/4 full.  Top off with pineapple juice and garnish with jalapeno slice and lime wedge.   Enjoy!

So drink up!  Whether it’s a Pimm’s Cup, Mint Julep or this tasty punch–raise your glass high for all those athletes who will make the world seem a little smaller for the next couple of weeks.
