Happy Hour Friday: Caliente’

This week has been a blur.  Whereas last week I was praying for Friday; this week it has slipped up on me, and I’m almost not ready for it!  Almost.

But really, who doesn’t want it to be Friday?  ;)

I spent last weekend in Dallas with my best friend and business partner buying for our gift shop.  Fun! Fun! Fun!

But… for everyone who thinks it’s just fun, let me clarify: it’s hard work.  And it’s exhausting.  Three full days of looking at thousands upon thousands of items and trying to make decisions on what will be a hit and what to pass on is not easy.  Sadly, many times our own personal choices must get pushed aside for more business savvy choices.  C’est la vie.

Happy Hour Friday: The Worm Bucket

Have we made it?  Is it Friday yet?

Please say it’s no joke and I’m not going to realize in 2.3 seconds that it’s really only Thursday.

Friday?  Phew!  Thank Goodness!  I thought I’d never make it….

Now don’t start asking me why this drink is called “the worm bucket.”  I have no idea.  In fact, I’ve never even been to the Prop Stop Bar or on Tickfaw River.  Somewhere, some how and at some time C. found this drink online and decided he’d like to try it.

Chocolate Coconut Ice Cream

Last summer I got the ice cream attachment for my KitchenAid mixer.  I waffled a bit before buying it because I wasn’t sure I’d get that much use out of it, and I despise having useless kitchen gadgets cluttering my precious cabinet space.

Well, needless to say, I’ve gotten more than my money’s worth of use out of it.  It’s a wonderful tool for making any kind of frozen concoction quickly and easily.

Plus it’s a huge bonus to get to create healthier options than what’s available to buy.  I tend to shy away from any ice cream recipe that calls for eggs, and I usually substitute coconut cream for the fat-laden sweetened condensed milk.  That way, our summer dessert indulgence doesn’t have to be so costly.  ;)

‘Tis the Season: Tomato Pie

Even though I have not shared any photographic evidence recently, my garden has been flourishing.  My tomato plants, though a tad overcrowded, are producing like gangbusters  :D  and we’ve been enjoying their fresh, sweet, delicious fruits for the past 3 weeks or so.

If  you can imagine, C. even agreed that all the time, sweat, and effort in the garden have been worth it because the fresh ingredients at our fingertips are no comparison to the bland veggies we get from the grocery store.  Healthier (I’ve used NO chemicals), Tastier, and Convenient-er  ;)

Happy Hour Friday: Omazing Iced Tea Spritzer

I have to apologize for my extended absence.  There was no “Happy Hour Friday” post last Friday for a few reasons.  Work has been crazy busy plus my gardening chores have kept me outside so much in my spare time that I’ve had very little left over for blogging.  But the best reason of all is that I spent a lot time last week and weekend catching up with my brother and sister-in-law who were visiting from Florida and staying with me and C.

We had such a fabulous time together!  There was a lot of eating (a LOT), a lot of laughing, and a good bit of pool time.  We even had my sister and brother-in-law stay with us for the weekend which made it almost a family reunion. :D  LOL  Almost, because we were still missing one sister :(  and a niece and two nephews.

Happy Hour Friday: Basil-Orange Mojito

Happy Friday, Friends!  We made it. :D

Even though it’s been a short work week, it has felt like it would never end.  I guess post-holiday work days are always like that.  It’s difficult to get back into the swing of things once we’ve had some extra time off to relax.

But today is Friday, and we are once again on the brink of a weekend full of great potential and endless possibilities.  :D
