Grilled Stuffed Peppers

I had such a wonderful three day weekend.  :D

I unplugged and enjoyed every minute of it.  There was lots of yard work, some house work and laundry, some cooking, and even a little R&R (relaxation and reading).  ;)

What did you get up to?  Was there a beach in your view?  Or a family gathering?  Or did you attend a remembrance service somewhere?  Whatever you did, I hope you enjoyed it and took some time to remember and to say “thank you.”

These stuffed peppers are something I’ve wanted to try for a while now.  Turns out they were super easy, and everyone loved them!  I admit, they are not the healthiest option; they are a splurge, really–but they sure are yummy!

 Grilled Stuffed Peppers 

large poblano peppers, halved

1 block cream cheese, softened

cracklins

2 T MexiCajun Seasoning

shredded cheese

Roughly chop cracklins and add about  4-5 T to softened cream cheese.  Add seasoning and mix together well.

Stuff mixture into each pepper half.  Cook on a heated grill for about 15 minutes, or until tops begin to brown.

Pull off grill and top with shredded cheese.

Serve hot.

  • Well I haven’t seen cracklins in a recipe in a very long time! YUM! I can certainly see what this were a hit. They look wonderful!
