Happy Hour Friday: Banana Monkey

Okay, I’m getting a jump on summer here; but this drink is just too good to wait until pool time!
I discovered this treat at a resort in Cancun the first time C. and I vacationed there. My sister and brother-in-law have a time share at a wonderful resort in the Zona Hotelera–right on the beach and as close to heaven as you can imagine. Perfect blue waters, clean, white beaches, pool-side bars, and sea turtle refuges = Heaven
Last year we were actually able
to release baby sea turtles into the sea under moonlight. That is one of my most favorite memories–ever. :) They were so tiny in the palm of my hand; and it was wonderful to watch them scurry towards the water, leaving little trails in the sand.
It was really an experience to get to witness a natural process so intimately. Priceless.
So back to the drink! This is the resort’s specialty. They make it at all the pool bars; and when they ring the bell at 3:00 for happy hour, everyone races to put their orders in. (Well, maybe “races” is too strong of a word for people soaking in the sun and wringing out every bit of relaxation they can while on vacation. It’s really like everyone cheers when the bell sounds, and then someone from your group wades over to the bar and places your order. LOL)
2 oz coconut rum
1 oz banana liqueor
1 oz kaluha
1/2 banana
1 T chocolate syrup
1 oz coconut cream
ice
Combine all ingredients in a blender with about 1 cup of ice. Blend, adding more ice as necessary to reach desired consistency. Serve with a straw, preferably pool-side. ;)

So cute! This looks super delicious…too bad I’m not 21! But I am going to Mexico in three weeks, where I am of legal drinking age, so this recipe may need to be used!
