I have wanted to start my gardening posts for weeks now, but other things have been getting in the way of my blogging time. I’m having to learn quickly to rearrange my days and organize my time a little better since there are even more responsibilities to juggle and fill my daily schedule. But I don’t want to get into all that right now.

Okay, I’m getting a jump on summer here; but this drink is just too good to wait until pool time!
I discovered this treat at a resort in Cancun the first time C. and I vacationed there. My sister and brother-in-law have a time share at a wonderful resort in the Zona Hotelera–right on the beach and as close to heaven as you can imagine. Last week I hosted a salad party for my mardi gras krewe. It was our first meeting of the new mardi gras year, and we wanted to have an informal meet and greet poolside.
Everyone brought her favorite salad and a lawn chair, and we all had a wonderful time welcoming new members and catching up with each other. The weather was beautifully mild, the food was delicious, and we even managed to get some krewe business accomplished.

Today is just a quick check in to let you know I am indeed still alive

These past two weeks have been so hectic for me, I don’t know whether I’m coming or going. My life is a whirlwind, and I am trying to regain some balance. Sadly, blogging has had to take a backseat to everything else; but I promise great things are on the way here! :D

Happy Hour Friday: Strawberry Mojito

I’m finally back! It’s been a hectic two weeks with a nice little getaway tucked in over the Easter weekend. I hope each one of you enjoyed your holiday weekend as much as I did.
C (Spicehubby) and I stole away to Abita Springs for a peaceful weekend in the woods. We found a wonderful little cabin nestled in the middle of 130 acres with nothing but a brown rabbit, a young deer and countless birds and bugs for company. It was heaven!
We brought along our bicycles and ambitiously took on the St. Tammany Trace.

I just want to take a moment to wish all of you, my friends, a wonderful Easter weekend. No matter what your faith, religious inclinations, or lack thereof, I hope you take this weekend to breathe in the rebirth all around you. Stop and smell the flowers. Enjoy your family, your friends, some good food and good times.

Oyster Fettucini en Provence

Last week I shared our attempt at charbroiled oysters based on the recipe from Drago’s restaurant in New Orleans. In celebration of my sister’s birthday, we cooked these again this weekend; and again, they were excellent.
We cooked nearly 150 oysters and fed about 10 people. That’s A LOT of oysters! And, of course, there were leftovers.
Since I never cook with oysters… like, NEVER… I had no idea what to do with the leftovers! But I figured since these were so good the first time around, I probably couldn’t go wrong using them in a secondary recipe.
