Irish Soda Bread

This dense bread is a staple for traditional Irish meals. I’ve never been a huge fan, though Lord knows I ate plenty of it while touring Irish Pubs through Europe. 
But that was in my younger, wilder years. I would never go such places now. <ahem!> 
Spicehubby does not agree with me on this one. He loves this bread, especially the beautiful crust it makes while baking. I do have to admit that I like it better when I make it and can eat it straight out of the oven, slathered with butter.
This particular recipe comes from allrecipes.com and is very easy. The end product was actually less dense than I remember soda bread to be, so maybe that’s why I ate more of it than I’m willing to admit. Hot straight from the oven….who could resist?!
Irish Soda Bread
- 4 cups all-purpose flour
- 4 tablespoons white sugar
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup margarine, softened
- 1 cup buttermilk
- 1 egg
- 1/4 cup butter, melted
- 1/4 cup buttermilk
Preheat oven to 375°. Line a baking sheet with parchment paper.
In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly.
Roll dough into 3-4″ balls and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an ‘X’ into the top of the loaf.

Bake in preheated oven for 30 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Remove from oven and brush with any remaining buttermilk/butter mixture.

I was never a huge fan of Irish soda bread but last year a colleague brought one in that was made by her friend and it was amazing. It was also lighter and sweeter than any other I’ve tasted. The colleague and friend were both from Ireland so maybe they know something. I’m still trying to get the recipe

This recipe is sweeter than other soda bread I’ve eaten. I’ve made a few different recipes from all over the web, and this one is the best I’ve tried.
