Beef Nachos

Last night was one of those rush home from work and try to figure out what’s for dinner before it gets too late kinda nights. I’m sure you’ve never had one of those, but it happens all the time at my house.
I know I should plan my weekly meals out, and a lot of the time I do. But… there is always at least one night during the week when I find myself scrambling.
Last night was one of those nights.
Luckily, I had on hand all the ingredients I needed for these nachos. And, believe it or not, as much as we eat Mexican around here, I had never actually made these before. I’ve done a grilled chicken version lots of times, but never beef.
They were DE-Li-Cious! 
(for 2)
1/2 lb ground meat
1/2 onion, sliced
1 T olive oil
1 cup shredded cheese
sliced jalepenos
pico de gallo
2 T sour cream, light
tortilla chips
Preheat oven to 350° and spread out a layer of tortilla chips onto a baking sheet.
Sautée onion in olive oil for about 3 minutes, then add ground meat and seasoning. Cook until meat is completely browned.
Scoop meat onto layer of chips. Add sliced jalepenos according to taste and then add cheese on top. Bake for about 8 minutes, or until cheese has all melted.
Remove from oven and top with sour cream and pico de gallo.
I served these with a side of refried beans and guacamole. YUM!
You can make as much or as little as you want. This recipe made plenty for two people. It’s also a great appetizer for tailgate parties or Cinqo de Mayo festivities. (Olé!)

My husband and I love making Nachos for dinner. You can add so many different toppings. I think we eat more of this than on a normal night of dinner.
