Peanut Butter & Jam Sandwich Cookies

A very dear friend asked me to help out with her daughter’s 6th birthday party.  Theme:  dress up tea party!  How could I say ‘no?’  This is going to be way too much fun, so I started brainstorming immediately.
What would little girls like to eat?  ???  I thought and thought, wondered and wondered.  Then realized:  Peanut butter and jam sandwiches, of course.

How could I change them up to be more fun, more fancy?  Make them as a cookie!

I also thought it would be fun to shape them as hearts since Valentine’s Day is approaching.  These would make such a cute sweetheart snack, don’t you think?

Peanut Butter & Jam Sandwich Cookies

strawberry preserves, or any other jam or jelly

Peanut Butter Cookies:

3 cups A/P flour

1 tsp baking powder

1 tsp salt

2 sticks butter, unsalted

1 cup peanut butter, creamy or chunky

1 cup lt brown sugar

1 cup sugar

2 large eggs

Preheat oven to 350° and line 2 baking sheets with parchment paper.

In a medium bowl, mix flour, salt and baking powder.  Set aside.  In the bowl of a stand mixer, beat butter and peanut butter together.  Scrape down sides of bowl and beat in sugars.  Next, add eggs, one at a time.  Scrape down sides of bowl again.

Add dry ingredients and mix until everything is well blended.

Spoon 1/2 of cookie dough onto a baking sheet.  Cover with a second piece of parchment paper and roll out with a rolling pin.  Since the dough is very soft it will spread out easily.  Work from center out to each corner until dough is about 1/4″ thick.

 

Remove top piece of parchment paper and discard.  Bake 14-16 minutes, just until edges begin to brown a little.  Remove from oven and allow to cool for 2-3 minutes.  Before they cool and set completely, cut into desired shapes using cookie cutters.  {I did this after cooking instead of before since this particular dough is too soft to cut prior to cooking.}  Place cut outs onto wire racks and allow to finish cooling completely.

Spread jam onto one side of one cookie….

And then top with a second cookie to create a sandwich.

I think a room full of 6 yr olds will like them!  Don’t you?

They may even like them as much as I had fun making them Smile

I may have eaten one… just to try it out…. But please don’t tell!

  • These look super cute. I love the idea. You always have to try out something new before anyone else gets one. If it is really good I recommending trying it two or three times just to be sure.
