Bread Bowl Dip

So there’s a lot happening right now. It’s Mardi Gras here in Louisiana, in case you didn’t know
There are parties, formal balls, parades and lots of eating. It’s almost Valentine’s Day which calls for all manner of sweet treats and tasty temptations. And there’s some big sporting event this Sunday.
Oh…. right! It’s the SuperBowl! lol I’ll be watching, and eating, and recovering from a Mardi Gras ball from the night before.
Needless to say, I’m a little busy right now; but that doesn’t mean I’m not whipping up good stuff in my kitchen. I’m juggling all those “holidays” and a birthday party while making sure that we have super yummy treats to eat.
Take this dip, for instance. It certainly won’t help you keep any New Year’s Resolutions, BUT it is reeeeally good and the perfect appetizer for laid-back munching during the big game.
1/2 lb shrimp, peeled, deveined and chopped
1 T butter
1 T MexiCajun Seasoning
8 oz cream cheese, softened
8 oz sour cream
16 oz cheddar cheese, shredded
1/2 cup green onions, chopped
1 small can green chiles, drained
1 large french or italian bread loaf
Cut top out and hollow out bread loaf, reserving bread pieces for dipping. Spread bread bits out evenly on a baking sheet and lightly toast in oven.
Sautée shrimp in butter and seasoning. Mix all other ingredients together until everything is well-incorporated. Stir in cooked shrimp. Spoon mixture into bread bowl…
and bake at 350° for 40 minutes or until top begins to lightly brown.
Serve straight from the oven with toasted bread pieces and chips or veggies for dipping.
Who will you be rooting for on Sunday? Since my Saints lost to San Fran
I’ll be watching mainly just for the commercials.
