Pumpkin Mousse

It’s November!!! And that means the holidays are upon us. Thanksgiving is 3 weeks from today, so I’m prepping my menu for the big day and trying out recipes to see if they make the cut. We are hosting it at our house this year, and I couldn’t be more excited! (can’t you tell?)
My husband comes from a big family, so they along with my family who live locally will add up to a house full of guinea pigs hungry people (hehehe).
This is another pumpkin recipe that I’ve been very pleased with. I believe I will incorporate it in some form in my Thanksgiving menu.
Pumpkin Mousse
1 can pumpkin purée
3 cups vanilla pudding
1 cup cool whip
2 tsp pumpkin pie spice
In a large bowl, combine pumpkin, vanilla and spice. Mix well. Fold in cool whip. Chill until time to serve.
Makes 8-10 servings.
When I served this at a pumpkin carving party the other day I used ginger snaps as an accompaniment. It was a hit!

How exiting is it to be hosting a thanksgiving party!! I’ve been asking my hubby every year and every year he declines because he doesn’t want me to work so hard. I guess he hasn’t seen this dessert yet =)

I definitely will keep you posted, Lilly! I’m so excited to be hosting it. We should have about 30 people or so, so I want to make sure I have everything all planned out and get as much done beforehand as possible.
