Mrs. Elsie was my mother-in-law. I was fortunate enough to meet her and get to know her for a couple of years before she passed away, just short of her 90th birthday. She was a petite fireball in her day and raised 8 children as proof of just how tough she was. My husband is the youngest of her children but not the last in this family’s lineage. There are over 100 descendants of Lee and Elsie Johnson. A big, beautiful family, of which I am happy to be a part.
After Mrs. Elsie passed away, my sisters-in-law came across this recipe and were sweet enough to share it with me. It was one of my husband’s favorites growing up, so I was anxious to try it out and carry Mrs. Elsie’s memory forward. Now it’s one of my favorites as well!

My husband and I cap off our weekend each Sunday night by watching HBO’s “Big Love.” It’s one of our favorites shows, and we try to never miss an episode. The series is an intriguing look at faith, convention and societal expectations of family and romantic relationships. I’ll be sorry to see it come to an end this season.

Flatbread Inspiration: Season 52–Atlanta, GA
Last summer on our annual buying trip to Atlanta, my business partner and I discovered the most wonderful restaurant! Season 52 boasts a changing menu according to the season and all dishes under 500 calories! We were very anxious to try it out after reading rave reviews and seeing the summer menu online. True to our expectations, it was fabulous. So much so, we went back a second night before leaving Atlanta!
The most memorable dishes we had were definitely the flatbreads. I believe in our two meals there we managed to try every one they had on the menu. They were all delicious! I have wanted to try my hand at this dish for my husband to try but have never gotten around to attempting it. Until tonight.

Simple Strawberry Amaretto Dessert

With the days getting longer and the temps getting warmer, I begin to spend less time in the kitchen and more time outside. That means I want meals that are easy to prepare and don’t need a lot of planning ahead. And if it can be grilled outside, even better!
I created this strawberry dessert from ingredients I had on hand. It turned out pretty good and made a beautiful presentation. And the best part, it’s guilt-free. ☺
