Winter has made what is sure to be its last appearance before the heat and humidity settle in for good here in unpredictable Louisiana. This schizophrenic weather is typical, especially for this time of year. And while I know I should be thankful for the mild temps, I am so sick of being chilled to the bone. (Yes, 40 degrees is cold for me! ha!)
So since it has been rainy, dreary and cold, nothing seemed more appropriate for today than a big ol’ pot of chili.

I’m a little late to the party. I know, I know. But I have Finally discovered coconut oil!
Months ago I bought a canister of LouAna coconut oil, put it away in my pantry and promptly forgot about it. All over the web I see blog posts about the many uses of this supposed wonder food, so I started thinking of of ways to incorporate it into our home menus. So this morning (after an uninspired hour at the gym, ahem) I decided to try my buttermilk biscuits, replacing butter with coconut oil.

Wow! Readers have started submitting their own recipes using our MexiCajun seasoning, and they are FABulous! (the readers and the recipes)
My dear friend Lori R. submitted a picture of her enchiladas and had all of Facebook begging for the recipe! She was kind enough to work out each ingredient and step by step instructions and share them with us. So today I’m sharing the recipe here for everyone to enjoy.
Thank you, Ms Lori!

This snack mix is so simple and great for munching!
It was my go-to snack for watching the Golden Globes last night. And paired with a little champagne–it was very glamorous! ;)
9 graham cracker sheets, broken up
1 cup small marshmallows
1/2 cup semi-sweet chocolate chips
1 pkg microwave kettle corn popcorn

I hope you had a wonderful holiday season and were able to enjoy time with family and friends.
My holiday was hectic (as usual), but it was also full of family, friends, good food and bad weather! A couple of tornados hit my neighborhood Christmas day and did a bit of damage to some local businesses and a few homes. Thankfully, they did not leave a path of utter destruction; and no one was hurt. We were left without power for a while; but nothing that a fire and a few candles couldn’t remedy. ;)

Well this past week has been trying, to say the least.
After spending a wonderful Thanksgiving Day with family and friends, Black Friday and Shop Small Biz Saturday came and went with a bang! We were VERY busy at the shop, I’m happy to say; but all the hustle and bustle took it’s toll on me.
Exhausted and unable to acclimate to the recent chilly weather, I came down with the worst head/chest cold I can ever remember having. Ugh…. I hate to be sick (as anyone else does, of course)! And it always seems to hit at the busiest time–when I definitely don’t have time to be out of work.
